Ingredients
  

1 sheet of puff pastry, thawed

4 large eggs

1 cup cooked and crumbled breakfast sausage

1 cup shredded cheddar cheese

1/2 cup diced bell peppers (mixed colors)

1/4 cup green onions, chopped

1/2 teaspoon garlic powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

1 egg, beaten (for egg wash)

Optional: Sriracha or hot sauce for serving

Instructions
 

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    In a large skillet over medium heat, cook the diced bell peppers until softened, about 3-4 minutes.

      Add the crumbled breakfast sausage to the skillet and continue to cook until browned and heated through, about another 5 minutes.

        In a bowl, beat the 4 large eggs and season with garlic powder, smoked paprika, salt, and pepper. Pour the beaten eggs into the skillet with the sausage and peppers, scrambling everything together until the eggs are fully cooked, about 3-4 minutes. Remove from heat.

          On a lightly floured surface, roll out the puff pastry sheet to smooth any creases. Cut the pastry into 4 equal squares.

            Spoon a generous amount of the sausage-egg mixture into the center of each pastry square. Top each with shredded cheddar cheese and a sprinkle of green onions.

              Fold the corners of the pastry squares up to meet in the middle and pinch to seal tightly. Place the filled pastries seam-side down on the prepared baking sheet.

                Brush the tops of the pastries with the beaten egg to give them a golden color when they bake.

                  Bake in the preheated oven for 20-25 minutes or until the pastries are puffed and golden brown.

                    Allow the pastries to cool slightly before serving. Drizzle with Sriracha or hot sauce if desired.
