6 large eggs

1 cup diced cooked potatoes (or frozen hash browns)

1 cup cooked sausage (crumbled or chopped)

1/2 cup diced bell peppers (any color)

1/2 cup diced onion

1 cup shredded cheddar cheese

1/4 cup milk

1 tablespoon olive oil

1 teaspoon smoked paprika

Salt and black pepper to taste

Fresh cilantro for garnish (optional)

Salsa for serving

Prepare the Filling: In a large skillet, heat olive oil over medium heat. Add the diced onion and bell peppers, cooking until they are soft and translucent, about 3-4 minutes.

    Cook the Potatoes: Stir in the cooked potatoes or hash browns and smoked paprika. Cook until slightly crispy, about 5-7 minutes. Remove the mixture from the skillet and set aside.

      Scramble the Eggs: In a bowl, whisk together the eggs, milk, salt, and pepper. Pour the egg mixture into the same skillet and scramble over medium heat until cooked through (about 3-4 minutes).

        Combine Ingredients: Return the potato and sausage mixture to the skillet with the scrambled eggs and mix well. Optionally, add half of the shredded cheese to the mixture and stir until melted.

          Assemble the Burritos: Lay a flour tortilla flat on a clean surface. Spoon a generous amount of the filling towards the center, then fold in the sides and roll from the bottom to create a tight burrito. Repeat with remaining tortillas and filling.
