2 everything bagels, split and toasted

4 large eggs

1 cup diced cooked potatoes (or frozen hash browns)

1 cup cooked breakfast sausage, crumbled (or diced ham)

½ cup shredded cheddar cheese

¼ cup diced bell pepper (any color)

¼ teaspoon smoked paprika

Salt and pepper to taste

Fresh chives or parsley for garnish

Optional: hot sauce for serving

Instructions
 

In a skillet over medium heat, cook the diced potatoes until golden brown and crispy (about 10-12 minutes). Stir occasionally to ensure even cooking. If using frozen hash browns, follow package directions.

    Add the crumbled sausage (or ham) and diced bell pepper to the skillet, cooking until the bell pepper is tender (about 3-4 minutes).

      In a separate bowl, whisk the eggs and season with smoked paprika, salt, and pepper.

        Push the potato and sausage mixture to the side of the skillet. Pour the eggs into the empty side and scramble until fully cooked and mixed with the other ingredients.

          Sprinkle the shredded cheddar cheese over the egg mixture and allow it to melt for a minute before combining everything together in the skillet.

            Remove from heat.

              To assemble, place a generous portion of the breakfast mixture onto the bottom half of each toasted bagel.

                Top with the other half of the bagel and garnish with chopped chives or parsley.

                  Serve warm with a drizzle of hot sauce if desired.
