4 bone-in pork chops (about 1-inch thick)

Salt and pepper, to taste

1 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

2 large eggs

1 cup buttermilk

1/4 cup vegetable oil (for frying)

4 strips of bacon, chopped

2 tablespoons all-purpose flour (for gravy)

2 cups milk

1/2 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional)

Fresh chives, for garnish

Prepare the Pork Chops: Season both sides of the pork chops generously with salt and pepper. In a shallow dish, combine the flour, garlic powder, onion powder, and paprika. In another bowl, whisk together the eggs and buttermilk until smooth.

    Dredge the Chops: Dip each pork chop first into the flour mixture, coating it well, then into the egg mixture, and again into the flour mixture. Ensure an even coating for maximum crispiness. Place the coated pork chops on a wire rack and let them rest for about 15 minutes.

      Fry the Pork Chops: In a large skillet, heat the vegetable oil over medium heat. Once hot, carefully add the pork chops in batches, making sure not to crowd the pan. Fry each chop for about 5-7 minutes per side until they are golden brown and cooked through (internal temperature should reach 145°F). Remove the chops and let them drain on a paper towel-lined plate.

        Make the Bacon Gravy: In the same skillet, reduce the heat to medium-low and add the chopped bacon. Cook until crispy, about 5 minutes. Remove excess grease, leaving about 2 tablespoons in the pan. Sprinkle 2 tablespoons of flour into the bacon grease and whisk continuously for 1-2 minutes to create a roux.
