2 Cornish game hens (about 1.5 lbs each)

4 cloves garlic, minced

1 lemon, zested and juiced

2 tablespoons fresh rosemary, chopped

2 tablespoons fresh thyme, chopped

1 tablespoon olive oil

Salt and pepper to taste

1 cup chicken broth

1 lemon, sliced (for garnish)

Fresh herbs (rosemary and thyme) for garnish

Instructions
 

Preheat your oven to 425°F (220°C).

    Rinse and pat dry the Cornish game hens with paper towels. Place them in a large roasting pan.

      In a small bowl, mix the minced garlic, lemon zest, lemon juice, chopped rosemary, chopped thyme, olive oil, salt, and pepper to create a marinade.

        Use your hands to rub the marinade all over the hens, making sure to get under the skin for deeper flavor.

          Pour the chicken broth around the hens in the roasting pan to keep them moist during cooking.

            Place the hens in the preheated oven and roast for about 50-60 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is golden brown. Baste the hens with the pan juices halfway through cooking for extra flavor.

              Once cooked, remove the hens from the oven and let them rest for about 10 minutes before serving.

                Garnish with lemon slices and additional fresh herbs before plating.
