Corned Beef Hash

2 cups cooked corned beef, diced

2 medium potatoes, peeled and diced

1 onion, finely chopped

1 red bell pepper, diced

2 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon smoked paprika

½ teaspoon black pepper

4 large eggs

Fresh parsley, chopped (for garnish)

Salt to taste

Instructions
 

In a large skillet, heat the olive oil over medium heat. Add the diced potatoes and cook for about 10-12 minutes, stirring occasionally until they start to soften and brown. Season with a pinch of salt.

    Add the chopped onion and red bell pepper to the skillet. Continue to sauté for an additional 5-7 minutes, or until the vegetables are tender.

      Stir in the minced garlic, smoked paprika, and black pepper, cooking for another 1-2 minutes until fragrant.

        Add the diced corned beef to the skillet, mixing well. Press the mixture down slightly with a spatula and allow it to cook for about 5 minutes without stirring. This will help form a nice crust on the bottom of the hash.

          Using a spoon, make four wells in the hash and crack an egg into each well. Cover the skillet with a lid and cook for another 5 - 6 minutes, or until the egg whites are set but the yolks remain runny, or to your desired doneness.

            Once cooked, remove the skillet from the heat. Garnish with freshly chopped parsley and additional seasoning if desired.
