3 lbs corned beef brisket

1 tablespoon mustard seeds

1 tablespoon black peppercorns

1 tablespoon coriander seeds

1 tablespoon allspice berries

4 cloves garlic, crushed

1 large onion, quartered

4 medium carrots, cut into chunks

4 medium potatoes, quartered

2 cups beef broth

3 bay leaves

Salt to taste

Fresh parsley for garnish

Prepare the Spices: In a small skillet over medium heat, add the mustard seeds, black peppercorns, coriander seeds, and allspice berries. Toast for about 2-3 minutes until fragrant, shaking the pan frequently to prevent burning. Remove from heat and let cool.

    Crust the Corned Beef: Rub the corned beef brisket generously with the crushed garlic and the toasted spice mixture. Make sure to cover all sides evenly.

      Setup the Slow Cooker: Place the quartered onion at the bottom of a slow cooker. Layer the carrots and potatoes over the onions.

        Add the Corned Beef: Place the spiced brisket on top of the vegetables in the slow cooker. Pour in the beef broth and add the bay leaves. Ensure the brisket is partially submerged for even cooking.

          Cook: Set the slow cooker to low and let it cook for about 8-10 hours, or until the meat is fork-tender. If you're short on time, cooking on high for 4-5 hours works too.

            Rest and Slice: Once done, carefully remove the corned beef from the slow cooker and let it rest for about 10 minutes. Slice against the grain for tender pieces.

              Serve: Plate the slices of corned beef along with the vegetables, and drizzle some of the cooking liquid over the top. Garnish with fresh parsley.
