2 cups dried pinto beans

6 cups water

1 onion, diced

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon chili powder

½ teaspoon smoked paprika

1 teaspoon salt (adjust to taste)

1 tablespoon olive oil

1 bay leaf

1 tablespoon lime juice

Fresh cilantro for garnish (optional)

Instructions
 

Rinse the dried pinto beans under cold water to remove any dirt or debris.

    In a large pot, combine the rinsed beans, 6 cups of water, and the bay leaf. Bring to a boil over high heat.

      Once boiling, reduce the heat to low, cover, and let simmer for about 1.5 to 2 hours, or until the beans are tender. Check occasionally and add more water if needed to keep the beans submerged.

        Once the beans are tender, heat the olive oil in a separate skillet over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.

          Stir in the minced garlic, cumin, chili powder, and smoked paprika, cooking for an additional 1-2 minutes until the spices are fragrant.

            Drain the cooked pinto beans, keeping a little of the cooking liquid. Add the beans and the sautéed onion mixture back into the pot.

              Add lime juice and salt to taste. Stir gently to combine, adding some of the reserved cooking liquid if you prefer a creamier consistency.

                Simmer everything together on low heat for another 10 minutes, allowing the flavors to meld.

                  Remove from heat, discard the bay leaf, and sprinkle fresh cilantro over the top if using.
