For the Cookie Dough:

1 cup unsalted butter, softened

1 cup granulated sugar

1 cup brown sugar, packed

2 large eggs

1 tablespoon vanilla extract

3 cups all-purpose flour

1 teaspoon baking soda

½ teaspoon salt

For the Cheesecake Filling:

8 oz cream cheese, softened

¼ cup granulated sugar

1 large egg

1 teaspoon vanilla extract

For the Salted Caramel Drizzle:

½ cup caramel sauce (store-bought or homemade)

½ teaspoon sea salt

Optional Toppings:

Additional caramel sauce for drizzling

Extra sea salt for sprinkling

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

    Make the Cookie Dough:

      - In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.

        - Beat in the eggs one at a time, then stir in the vanilla extract.

          - In another bowl, whisk together the flour, baking soda, and salt. Gradually mix the dry ingredients into the wet mixture until combined.

            Prepare the Cheesecake Filling:

              - In a medium bowl, mix the softened cream cheese, granulated sugar, egg, and vanilla extract until smooth and creamy.

                Assemble the Cookies:

                  - Scoop out a tablespoon of cookie dough and flatten it in your palm. Place about a teaspoon of the cheesecake filling in the center, then wrap the cookie dough around it, sealing it completely.

                    - Place the filled cookie dough balls on the prepared baking sheet, spacing them about 2 inches apart.

                      Bake:

                        - Bake in the preheated oven for 12-15 minutes or until the edges are lightly golden and the center looks set.

                          - Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

                            Prepare the Salted Caramel Drizzle:

                              - While the cookies cool, heat the caramel sauce in a microwave-safe bowl for about 15-20 seconds until it’s pourable. Stir in ½ teaspoon of sea salt.

                                Drizzle and Serve:

                                  - Drizzle the salted caramel sauce over the cooled cookies. For extra flair, you can also drizzle some additional caramel and sprinkle a pinch of sea salt on top.
