1 lb (450g) ground beef (80/20 blend for flavor)

1 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

Salt and black pepper to taste

4 slices aged cheddar cheese

4 brioche burger buns

1 cup lettuce leaves

1 large ripe tomato, sliced

1/2 red onion, thinly sliced

Pickles (optional)

1/4 cup mayonnaise

2 tablespoons Dijon mustard

Cooking oil for grilling

Prepare the Beef Patties: In a mixing bowl, combine the ground beef with garlic powder, onion powder, smoked paprika, salt, and pepper. Gently mix until just combined; avoid overworking the meat.

    Form Patties: Divide the mixture into 4 equal portions and form into patties about ¾ inch thick. Make a small indentation in the center of each patty to prevent puffing while cooking.

      Preheat the Grill: Heat your grill or skillet over medium-high heat. Lightly coat the grill grates with cooking oil to prevent sticking.

        Cook the Patties: Once the grill is hot, place the patties on it. Cook for about 4-5 minutes on one side until a nice crust forms. Flip the patties, and add a slice of cheddar cheese on top. Cook for an additional 3-4 minutes until the cheese has melted and the internal temperature reaches 160°F (70°C) for medium.

          Toast the Buns: While the burgers are cooking, slice the brioche buns in half and toast them on the grill for about 1-2 minutes until golden brown.

            Prepare the Condiments: In a small bowl, mix the mayonnaise and Dijon mustard together. Adjust to taste.

              Assemble the Burgers: Spread the mayo-mustard mixture on the bottom half of each toasted brioche bun. Place the lettuce leaves followed by a cooked patty with melted cheese. Top with slices of tomato, red onion, and pickles if desired. Finish with the top half of the bun.

                Serve: Serve the burgers hot with your choice of sides such as fries or a fresh salad.
