2 cups water (divided)

1/2 cup freshly squeezed lemon juice (about 4-6 lemons)

1/4 cup honey or agave syrup (adjust to taste)

1/4 teaspoon baking soda

1/4 teaspoon butterfly pea flower powder (or dried flowers)

Ice cubes

Fresh mint leaves or lemon slices for garnish

Instructions
 

In a small pot, bring 1 cup of water to a light simmer.

    Add the butterfly pea flower powder (or dried flowers) to the simmering water. Let it steep for about 5-10 minutes until the water turns a deep blue hue.

      Strain the liquid through a fine mesh sieve into a bowl, discarding the petals. Allow the blue butterfly pea tea to cool to room temperature.

        In a large pitcher, combine the freshly squeezed lemon juice and honey (or agave syrup). Stir until the sweetener is fully dissolved.

          Add 1 cup of cold water to the pitcher and stir to combine.

            Slowly add the baking soda to the lemon juice mixture. Watch as the color changes – it will shift from yellow to a vibrant pink!

              Pour the cooled butterfly pea tea into the pitcher and stir gently. The lemon and tea will swirl together, creating a beautiful gradient effect.
