Ingredients
  

4 cups green cabbage, finely shredded

1 cup red cabbage, finely shredded

2 large carrots, grated

1 red bell pepper, thinly sliced

½ cup green onions, sliced

½ cup fresh cilantro, chopped

½ cup mayonnaise

2 tablespoons apple cider vinegar

1 tablespoon honey

1 teaspoon Dijon mustard

Salt and pepper to taste

¼ teaspoon cayenne pepper (optional for a kick)

Instructions
 

In a large mixing bowl, combine the green cabbage, red cabbage, grated carrots, sliced red bell pepper, green onions, and fresh cilantro. Toss gently to mix.

    In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, honey, Dijon mustard, and cayenne pepper (if using) until smooth and well combined.

      Pour the dressing over the shredded vegetables and mix well to coat all the ingredients evenly.

        Season with salt and pepper to taste, giving it a final toss.

          Cover the coleslaw and refrigerate for at least 30 minutes before serving, allowing flavors to meld and the coleslaw to crisp up.
