4 large russet potatoes, peeled and diced

4 cups vegetable broth

1 cup chopped green cabbage

1 cup leeks, cleaned and sliced

1 cup milk (or plant-based milk for vegan option)

2 tablespoons unsalted butter (or olive oil for vegan option)

2 cloves garlic, minced

Salt and pepper to taste

1 tablespoon chopped fresh chives (for garnish)

1 tablespoon olive oil (for drizzling)

Instructions
 

In a large pot, melt the butter (or heat olive oil) over medium heat. Add the sliced leeks and minced garlic, sautéing until soft and fragrant, about 3-4 minutes.

    Stir in the diced potatoes and cook for an additional 2-3 minutes to slightly brown the potatoes.

      Pour in the vegetable broth and bring to a boil. Reduce heat and let it simmer uncovered for about 15-20 minutes, or until the potatoes are tender.

        Add the chopped cabbage to the pot, stirring to combine. Continue to simmer for another 5-7 minutes until the cabbage is soft.

          Once everything is cooked, use an immersion blender to puree the soup to your desired consistency—smooth or a little chunky.

            Stir in the milk and season with salt and pepper to taste. Heat through for another 2-3 minutes.

              Serve hot, garnished with chopped chives and a drizzle of olive oil on top for extra flavor.
