4 chicken thighs, boneless and skinless

1 cup coconut milk

1 ripe peach, sliced

2 tablespoons fresh ginger, grated

3 cloves garlic, minced

1 tablespoon soy sauce

1 tablespoon honey

1 teaspoon ground coriander

1 teaspoon cumin

Salt and pepper to taste

2 tablespoons coconut oil

Fresh cilantro, for garnish (optional)

Instructions
 

In a bowl, combine the coconut milk, grated ginger, minced garlic, soy sauce, honey, ground coriander, cumin, salt, and pepper. Whisk until well blended.

    Place the chicken thighs in a ziplock bag or shallow dish and pour the coconut marinade over them. Seal or cover and marinate in the refrigerator for at least 30 minutes (up to overnight for best flavor).

      Heat the coconut oil in a large skillet over medium heat. Once hot, remove the chicken from the marinade (reserve the marinade) and add the chicken to the skillet. Sear for about 5-7 minutes on each side until golden brown.

        Pour the reserved marinade over the chicken in the skillet. Add the sliced peaches and bring to a gentle simmer. Cover and cook for another 10-15 minutes, until the chicken is cooked through (internal temperature should reach 165°F).

          After cooking, remove the skillet from heat and let it rest for a few minutes.

            Serve the chicken warm, spooning the peach and coconut sauce over the top. Garnish with fresh cilantro, if desired.
