Ingredients

1 can (13.5 oz) coconut milk (full-fat)

1/2 cup unsweetened shredded coconut

1/4 cup powdered sugar

2 tablespoons maple syrup

1 teaspoon vanilla extract

1/4 teaspoon salt

1 teaspoon gelatin (optional for firmness)

2 tablespoons cold water (if using gelatin)

Fresh berries or mint leaves for garnish

Instructions

Prepare the Gelatin (if using): In a small bowl, sprinkle the gelatin over the cold water and let it sit for about 5 minutes to bloom.

Whip the Coconut Milk: In a mixing bowl, scoop out the solid portion of the coconut milk from the can (reserve the liquid for another use). Using an electric mixer, whip the coconut cream until it becomes fluffy and light.

Add Sweeteners: Gradually add powdered sugar, maple syrup, vanilla extract, and salt to the whipped coconut cream. Mix until well combined and smooth.

Incorporate Shredded Coconut: Gently fold in the unsweetened shredded coconut into the mixture, ensuring it's evenly distributed.

Melt the Gelatin (if using): If you opted for gelatin, heat a small amount of water until warm (not boiling), and dissolve the bloomed gelatin in it. Allow it to cool slightly, then mix it into the mousse.

Chill the Mousse: Divide the mixture into serving cups or bowls and refrigerate for at least 2-3 hours, or until set. If using gelatin, it will firm up more prominently.

Serve: Once set, remove the mousse from the refrigerator and garnish with fresh berries or mint leaves.
