4 salmon fillets

1 can (13.5 oz) coconut milk

2 tablespoons red curry paste

4 cloves garlic, minced

2 tablespoons butter

1 tablespoon olive oil

1 bell pepper, sliced (any color)

1 cup snap peas (or green beans)

2 tablespoons fish sauce

1 tablespoon lime juice

Salt and pepper to taste

Fresh cilantro for garnish

Heat the olive oil in a large skillet over medium heat. Once hot, add the minced garlic and cook for about 1 minute until fragrant.

    Add the red curry paste to the skillet and stir, cooking for an additional minute to deepen the flavor.

      Pour in the coconut milk, stirring well to combine with the curry paste and garlic, letting it simmer for about 5 minutes.

        Gently place the salmon fillets skin-side down into the curry mixture. Use a spoon to baste the tops of the fillets with the sauce.
