10 cloves of garlic, peeled

1 medium onion, chopped

2 tablespoons olive oil

1 teaspoon ground cumin

1 teaspoon smoked paprika

4 cups vegetable broth

2 medium potatoes, diced

1 cup heavy cream (or coconut cream for a vegan version)

Salt and black pepper to taste

Fresh parsley or chives for garnish

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

    Add the peeled garlic cloves and cook for an additional 2-3 minutes, stirring frequently to avoid burning. The garlic should become fragrant and slightly golden.

      Stir in the ground cumin and smoked paprika, allowing the spices to toast for about 1 minute.

        Add the diced potatoes to the pot and mix well to coat them with the garlic and spices.

          Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for about 20 minutes, or until the potatoes are fork-tender.

            Once the potatoes are tender, use an immersion blender to puree the soup until smooth and creamy. If you don’t have an immersion blender, carefully transfer the soup in batches to a blender.

              Return the blended soup to the pot and stir in the heavy cream (or coconut cream). Allow the soup to heat through without boiling.

                Season with salt and black pepper to taste, adjusting as necessary.
