4 large russet potatoes, peeled and diced

1 medium onion, finely chopped

2 cloves garlic, minced

4 cups vegetable broth

1 cup whole milk or heavy cream

1 teaspoon dried thyme

2 bay leaves

2 tablespoons butter

Salt and pepper to taste

Fresh dill or chives, chopped for garnish

Instructions
 

In a large pot, melt the butter over medium heat. Add the chopped onion and sauté until it becomes translucent, about 5 minutes.

    Add the minced garlic and cook for another 1-2 minutes until fragrant.

      Stir in the diced potatoes, thyme, and bay leaves. Sauté for an additional 3-4 minutes, allowing the potatoes to lightly coat in the butter.

        Pour in the vegetable broth and bring the mixture to a boil.

          Once boiling, reduce heat to a simmer and cover. Cook for approximately 15-20 minutes, or until the potatoes are tender.

            Remove the bay leaves and use an immersion blender to puree the soup to your desired consistency (smooth or chunky). If you prefer a chunkier soup, blend only half of the soup and return it to the pot.

              Stir in the milk or cream, and heat through. Adjust seasoning with salt and pepper to taste.

                Serve hot, garnished with fresh dill or chives for added flavor.
