4 large russet potatoes, peeled and diced

1 medium onion, finely chopped

2 cloves garlic, minced

4 cups vegetable or chicken broth

1 cup heavy cream

1 cup shredded sharp cheddar cheese

1/2 cup sour cream

1/4 cup chopped green onions (plus more for garnish)

1/2 cup cooked and crumbled bacon (optional)

4 tablespoons unsalted butter

1 teaspoon dried thyme

Salt and pepper to taste

Instructions
 

In a large pot, melt the butter over medium heat. Add the chopped onion and sauté for about 5 minutes until soft and translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

    Add the diced potatoes and broth to the pot. Bring to a boil, then reduce the heat and let it simmer for 15-20 minutes, or until the potatoes are tender.

      Once the potatoes are cooked, use a potato masher or immersion blender to slightly mash the potatoes, leaving some chunks for texture.

        Stir in the heavy cream, cheddar cheese, sour cream, thyme, salt, and pepper. Continue to cook on low heat until the cheese is melted and the soup is heated through.

          Stir in the chopped green onions and crumbled bacon (if using). Taste and adjust seasoning with more salt and pepper if necessary.

            Serve the soup hot, garnished with additional green onions, cheese, and crispy bacon bits.
