1 pound ground beef

1 medium onion, diced

2 cloves garlic, minced

1 carrot, diced

1 stalk celery, diced

1 can (14.5 oz) diced tomatoes (with juice)

4 cups beef broth

1 cup elbow macaroni

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat olive oil over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon, about 5-7 minutes. Drain excess fat if necessary.

    Stir in the diced onion, minced garlic, carrot, and celery. Sauté until the vegetables are tender, about 5 minutes.

      Add the can of diced tomatoes (with juices), beef broth, oregano, basil, salt, and pepper. Bring the mixture to a boil.

        Once boiling, reduce the heat and let it simmer for 15 minutes, allowing the flavors to meld.

          Add the elbow macaroni to the pot and stir well. Cook for an additional 10-12 minutes, or until the macaroni is al dente, stirring occasionally to prevent sticking.

            Taste and adjust seasoning if needed.

              Serve hot, garnished with fresh parsley.
