6 quality pork sausages (or vegetarian sausage alternative)

4 large russet potatoes, peeled and chopped

1 cup whole milk

4 tablespoons unsalted butter

1 tablespoon olive oil

1 medium onion, thinly sliced

2 cloves garlic, minced

1 tablespoon Dijon mustard

1 cup beef or vegetable broth

1 teaspoon Worcestershire sauce (optional)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Prepare the Mashed Potatoes: In a large pot, boil the chopped potatoes in salted water for about 15-20 minutes, or until fork-tender. Drain and return to the pot.

    Mash the Potatoes: Add the milk and butter to the drained potatoes. Mash until smooth and creamy. Season with salt and pepper to taste. Set aside, keeping warm.

      Cook the Sausages: In a large skillet, heat the olive oil over medium heat. Add the sausages and cook for about 6-8 minutes, turning occasionally until they're browned and cooked through. Remove from skillet and keep warm.

        Make the Onion Gravy: In the same skillet, add the sliced onions and cook for about 5 minutes until they are soft. Stir in the minced garlic and cook for another minute.

          Create the Gravy Base: Add the Dijon mustard, Worcestershire sauce (if using), and broth to the onions. Bring to a simmer, scraping up any brown bits from the bottom of the pan. Let the gravy reduce slightly for about 5-7 minutes.

            Combine and Serve: Slice the cooked sausages and arrange them over a generous serving of mashed potatoes. Spoon the onion gravy generously over the sausages and potatoes.
