Ingredients

8 slices of day-old bread (like brioche or challah), cut into small cubes

3 large eggs

1 cup whole milk

1/4 cup granulated sugar

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup maple syrup (plus extra for drizzling)

1/4 cup unsalted butter, melted

1/2 cup brown sugar

1 tablespoon cinnamon (for topping)

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C) and grease a standard muffin tin with cooking spray or butter.

Prepare the Bread: Place the cubed bread in a large mixing bowl. This will be the base for your muffins, allowing them to soak up all the delicious flavors.

Make the Custard Mixture: In another bowl, whisk together the eggs, whole milk, granulated sugar, vanilla extract, ground cinnamon, and salt until well combined and slightly frothy.

Combine Bread and Custard: Pour the egg mixture over the cubed bread, ensuring all the pieces are thoroughly coated. Let it sit for about 10-15 minutes so the bread can absorb the liquid.

Add Maple Syrup: Gently fold in the melted butter and 1/2 cup of maple syrup into the soaked bread mixture, blending well.

Prepare the Topping: In a small bowl, combine the brown sugar and 1 tablespoon of cinnamon. This will create a sweet topping for the muffins.

Fill the Muffin Tin: Scoop the French toast mixture into the prepared muffin tin, filling each cup about 3/4 of the way. Sprinkle the cinnamon sugar mixture generously on top of each muffin.

Bake: Bake in the preheated oven for 18-20 minutes or until the muffins are puffed up and golden brown. A toothpick inserted in the center should come out clean.

Cool and Serve: Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack. Drizzle with extra maple syrup if desired before serving.

Enjoy: Your Cinnamon Sugar French Toast Muffins are now ready to be devoured! Perfect for breakfast or brunch, and they can be enjoyed warm or at room temperature.
