Cinnamon Sugar Churro Bites

Ingredients
  

1 cup all-purpose flour

1 teaspoon baking powder

1/4 teaspoon salt

1/2 cup water

2 tablespoons unsalted butter

1/4 teaspoon vanilla extract

1/2 cup granulated sugar

1 tablespoon ground cinnamon

Oil for frying

Instructions
 

In a medium saucepan, combine the water, butter, and a pinch of salt over medium heat. Stir until the butter is melted.

    Gradually add the flour and baking powder, stirring continuously until a dough forms and begins to pull away from the sides of the pan. Remove from heat.

      Allow the dough to cool slightly, then stir in the vanilla extract. Let it cool for about 5 minutes.

        Heat the oil in a deep frying pan over medium-high heat (about 350°F or 175°C).

          While the oil heats, prepare the cinnamon sugar by mixing the granulated sugar and cinnamon together in a bowl. Set aside.

            Transfer the dough to a piping bag fitted with a large star tip. Pipe small bite-sized pieces (about 1 inch) directly into the hot oil, cutting them with scissors.

              Fry the churro bites in batches, being careful not to overcrowd the pan. Fry until golden brown, about 2-3 minutes per side.

                Using a slotted spoon, remove the churro bites from the oil and drain on paper towels.

                  While still warm, roll the churro bites in the cinnamon sugar mixture until fully coated.

                    Serve immediately and enjoy your sweet, crispy Cinnamon Sugar Churro Bites!
