1 ½ cups chocolate cookie crumbs

5 tablespoons unsalted butter, melted

16 oz cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

3 large eggs

½ cup sour cream

1 cup fresh strawberries, pureed

2 tablespoons cocoa powder

1 cup fresh strawberries, sliced for garnish

2 tablespoons chocolate shavings (optional for garnish)

Instructions
 

Preheat your oven to 325°F (160°C).

    In a medium bowl, combine the chocolate cookie crumbs and melted butter. Mix until the crumbs are well coated.

      Press the cookie mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove from the oven and allow to cool.

        In a large mixing bowl, beat the softened cream cheese until smooth using an electric mixer. Gradually add the granulated sugar and continue to beat until well combined.

          Add the vanilla extract and then the eggs, one at a time, mixing well after each addition.

            Stir in the sour cream until fully incorporated, then divide the mixture into two equal parts.

              To one half, gently fold in the strawberry puree. To the other half, mix in cocoa powder until well blended.

                Begin layering the cheesecake into the springform pan: Pour half of the chocolate mixture over the crust, spreading it evenly. Next, add the entire strawberry mixture on top, followed by the remaining chocolate mixture.

                  Using a knife, gently swirl through the layers to create a marbled effect.

                    Bake in the preheated oven for 55-60 minutes or until the center is set but slightly jiggly. Turn off the oven, crack the oven door, and let the cheesecake cool inside for 1 hour.

                      Remove from the oven and refrigerate for at least 4 hours, preferably overnight, to fully set.

                        Before serving, garnish with fresh sliced strawberries and chocolate shavings if desired.
