Chocolate Salted Caramel Cookies

1 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

2 teaspoons vanilla extract

2 1/2 cups all-purpose flour

3/4 cup cocoa powder

1 teaspoon baking soda

1/2 teaspoon salt

1 cup chocolate chips (dark or milk, your choice)

1/2 cup caramel sauce (store-bought or homemade)

Sea salt flakes, for sprinkling

Instructions
 

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

    In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until fluffy and well combined.

      Beat in the eggs one at a time, followed by the vanilla extract. Mix until smooth.

        In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt. Slowly add the dry ingredients to the wet mixture, mixing until just combined.

          Fold in the chocolate chips, ensuring they are evenly distributed throughout the dough.

            Chill the dough in the refrigerator for about 30 minutes for easier handling.

              Once chilled, use a tablespoon to scoop out the dough and form balls. Make a small indentation in the center of each ball.

                Add about half a teaspoon of caramel sauce into each indentation. Then, cover the caramel with a little more dough, sealing it in.

                  Place the cookies on the prepared baking sheet, allowing enough space between each one, and lightly press each cookie to flatten slightly.

                    Bake in the preheated oven for 10-12 minutes or until the edges are set and the centers look slightly underbaked (they will continue to cook as they cool).

                      Remove from the oven and immediately sprinkle with sea salt flakes while the cookies are still warm.

                        Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
