Ingredients

200g dark chocolate (70% cocoa), chopped

3 large eggs, separated

50g granulated sugar

200ml heavy cream

1 teaspoon vanilla extract

200g fresh raspberries

2 tablespoons powdered sugar (for raspberries)

Pinch of salt

Optional: mint leaves for garnish

Instructions

Melt the Chocolate: In a heatproof bowl, melt the dark chocolate over a pot of simmering water, stirring until smooth. Remove from heat and let it cool slightly.

Prepare the Egg Yolks: In a separate bowl, whisk together the egg yolks and granulated sugar until pale and creamy. Gradually add the melted chocolate and mix until well combined.

Whip the Cream: In another bowl, whip the heavy cream and vanilla extract until soft peaks form. Gently fold the whipped cream into the chocolate mixture until fully incorporated.

Beat the Egg Whites: In a clean bowl, whisk the egg whites with a pinch of salt until stiff peaks form. Carefully fold the egg whites into the chocolate mixture in three additions to maintain the airy texture.

Prepare Raspberries: Toss the fresh raspberries with powdered sugar in a small bowl. Set aside to let them macerate for about 10 minutes.

Assemble the Mousse: Spoon a layer of the mousse into silicone dome molds, filling them halfway. Add a layer of macerated raspberries, then top with more mousse to fill the molds completely. Tap the molds gently to remove air bubbles.

Chill: Cover the molds with plastic wrap and refrigerate for at least 4 hours, or until the mousse is set.

Unmold and Serve: Once set, carefully remove the mousse domes from the molds. Transfer to serving plates.

Garnish: Optional - Garnish with additional fresh raspberries, mint leaves, or a dusting of cocoa powder for a finishing touch.

                    Prep Time: 30 minutes | Total Time: 4 hours 30 minutes | Servings: 6

                      - Presentation Tips: Serve the mousse domes on white dessert plates for contrast, and drizzle a raspberry coulis around each dome to enhance the visual appeal. Scatter some fresh raspberries and mint leaves on top for added color and freshness.
