For the crust:

¼ cup granulated sugar

For the cheesecake filling:

16 oz cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

4 large eggs

1 cup sour cream

8 oz dark chocolate, melted and slightly cooled

For the chocolate mousse layer:

1 cup heavy cream

4 oz dark chocolate, melted and slightly cooled

1 tablespoon powdered sugar

½ teaspoon vanilla extract

For garnish:

Chocolate shavings

Whipped cream (optional)

Prep the crust: Preheat your oven to 350°F (175°C). In a medium bowl, combine the chocolate cookie crumbs, melted butter, and granulated sugar until the mixture resembles wet sand. Press the mixture firmly into the bottom of a 9-inch springform pan to create an even crust. Bake for 10 minutes, then remove from the oven and allow to cool.

    Make the cheesecake filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth. Gradually add the granulated sugar and mix until well combined. Next, add the vanilla extract and mix in the eggs one at a time, ensuring to mix thoroughly after each addition. Finally, add the sour cream and the melted dark chocolate, mixing until smooth and creamy.

      Bake the cheesecake: Pour the cheesecake filling over the cooled crust in the springform pan. Bake in the preheated oven for 50–60 minutes or until the center is set (it may still have a slight jiggle). Once baked, turn off the oven and crack open the oven door, allowing the cheesecake to cool gradually in the oven for 1 hour. Remove from the oven and let it cool completely on a wire rack, then refrigerate for at least 4 hours or overnight.

        Prepare the chocolate mousse: In a clean mixing bowl, whip the heavy cream with an electric mixer until soft peaks form. Gradually add the powdered sugar and vanilla extract, continuing to whip until stiff peaks form. Gently fold in the melted dark chocolate until combined, being careful not to deflate the whipped cream too much.

          Assemble the cheesecake: Once the cheesecake is thoroughly chilled, spread the chocolate mousse layer evenly over the top. Use a spatula to create swirls if desired.

            Chill and serve: Refrigerate the assembled cheesecake for at least 2 more hours to set the mousse layer. Before serving, garnish with chocolate shavings and a dollop of whipped cream, if using.
