Ingredients

2 ripe bananas

1/4 cup creamy peanut butter

1/2 cup dark chocolate chips (or chocolate melting wafers)

2 tablespoons coconut oil (optional, for smooth melting)

Sea salt (for garnish)

Chopped nuts or sprinkles (optional, for topping)

Instructions

Peel the bananas and slice them into 1/2 inch thick rounds.

On a slice of banana, spread about 1 teaspoon of peanut butter, then top with another banana slice to create a sandwich. Repeat for all banana slices.

Arrange the banana sandwiches on a baking sheet lined with parchment paper, then place them in the freezer for at least 1 hour or until they are frozen solid.

While the banana sandwiches are freezing, prepare the chocolate coating. In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Heat in the microwave in 30-second intervals, stirring in between, until fully melted and smooth.

Remove the frozen banana sandwiches from the freezer. Dip each sandwich into the melted chocolate, ensuring they are fully coated.

Place the chocolate-coated sandwiches back on the parchment-lined baking sheet. Before the chocolate firms up, sprinkle with sea salt and any optional toppings (chopped nuts or sprinkles) for extra flavor and crunch.

Transfer the baking sheet back to the freezer for another 30 minutes to allow the chocolate to set.

Once set, enjoy the chocolate-covered frozen banana peanut butter sandwiches right away, or store them in an airtight container in the freezer for up to a week.
