Ingredients

1 cup pecan halves

1 cup semi-sweet chocolate chips

1 cup caramels, unwrapped

2 tablespoons heavy cream

1 teaspoon vanilla extract

Sea salt, for sprinkling (optional)

Instructions

Prep the Pecans: Preheat your oven to 350°F (175°C). Spread the pecan halves on a baking sheet and toast them in the oven for about 5-7 minutes until they are golden and fragrant. Remove from the oven and let them cool.

Melt the Caramels: In a small saucepan over low heat, combine the unwrapped caramels and heavy cream. Stir frequently until the caramels are completely melted and the mixture is smooth. Remove from heat and stir in the vanilla extract.

Melt the Chocolate: In a microwave-safe bowl, heat the semi-sweet chocolate chips in 30-second intervals, stirring in between until fully melted and smooth.

Assemble the Clusters: On a lined baking sheet, place small piles (about 1 tablespoon) of pecans, leaving some space between each cluster. Pour a spoonful of the melted caramel over each mound of pecans, letting it drape over the sides slightly.

Drizzle with Chocolate: Using a spoon, drizzle the melted chocolate over the caramel-covered pecans to create a “cluster” effect.

Finish and Set: If desired, sprinkle a pinch of sea salt over each cluster while the chocolate is still warm. Allow the clusters to cool at room temperature until the chocolate hardens, or refrigerate for about 15-20 minutes to speed up the process.

Serve and Enjoy: Once set, gently remove the turtle clusters from the baking sheet and enjoy your delicious treat!
