Chipotle Steak Quesadilla

1 lb flank steak, thinly sliced

2 tablespoons chipotle chili powder

1 teaspoon cumin

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

1 tablespoon olive oil

Salt and pepper to taste

4 large flour tortillas

2 cups shredded mozzarella cheese

1 cup sliced bell peppers (assorted colors)

1 cup sliced red onion

1/4 cup chopped fresh cilantro (for garnish)

Salsa and sour cream (for serving)

Instructions
 

In a bowl, combine the sliced flank steak with chipotle chili powder, cumin, garlic powder, onion powder, smoked paprika, olive oil, salt, and pepper. Let it marinate for at least 30 minutes to absorb the flavors.

    Heat a large skillet over medium-high heat. Add the marinated steak and cook for about 4-5 minutes, or until browned and cooked to your liking. Remove from the skillet and set aside.

      In the same skillet, add the sliced bell peppers and red onion. Sauté for about 3-4 minutes, until they are tender but still crisp.

        Lower the heat to medium and place one flour tortilla in the skillet. On one half of the tortilla, layer half of the cooked steak, sautéed vegetables, and 1/2 cup of shredded mozzarella cheese.

          Fold the other half of the tortilla over the filling and cook for 3-4 minutes until the bottom is golden brown and the cheese starts to melt. Carefully flip the quesadilla and cook for another 2-3 minutes on the other side.

            Remove from the skillet and let it rest for a couple of minutes before cutting it into wedges.

              Repeat the process with the second tortilla and remaining ingredients.

                Garnish the quesadillas with chopped cilantro and serve with salsa and sour cream on the side.
