Ingredients

1.5 lbs flank steak

2 tablespoons chipotle powder

1 tablespoon smoked paprika

1 tablespoon garlic powder

1 teaspoon cumin

1 teaspoon salt

1 teaspoon black pepper

2 tablespoons olive oil

1 lime, juiced

1/4 cup fresh cilantro, chopped

1 avocado, sliced

1 small red onion, thinly sliced

Corn tortillas, for serving

Instructions

In a small bowl, mix together the chipotle powder, smoked paprika, garlic powder, cumin, salt, and black pepper to create the spice rub.

Pat the flank steak dry with paper towels and rub the spice mixture evenly over both sides of the steak.

Drizzle olive oil in a large skillet or grill pan and heat over medium-high heat.

Once hot, add the steak to the skillet and sear for about 4-5 minutes on each side for medium-rare, or until it reaches your desired doneness.

Remove the steak from heat and let it rest for 5 minutes before slicing. Drizzle lime juice over the steak for added flavor.

While the steak is resting, warm the corn tortillas in a separate skillet for about 30 seconds on each side until pliable.

Slice the steak against the grain into thin strips.

To assemble, place a few slices of steak onto a warmed tortilla, and top with avocado slices, red onion, and chopped cilantro.

Serve immediately, allowing everyone to prepare their own taco with the flavorful toppings.
