1 lb chicken breast, boneless and skinless

2 tablespoons chipotle in adobo sauce (finely chopped)

1 tablespoon olive oil

2 teaspoons smoked paprika

1 teaspoon cumin

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

8 small corn tortillas

1 cup red cabbage, shredded

1 avocado, sliced

½ cup fresh cilantro, chopped

1 lime, cut into wedges

½ cup crumbled feta cheese (optional)

Instructions
 

Prepare the Chicken: In a large mixing bowl, combine the chopped chipotle in adobo sauce, olive oil, smoked paprika, cumin, garlic powder, onion powder, salt, and pepper. Mix well to create a marinade.

    Marinate the Chicken: Add the chicken breasts to the marinade, ensuring they are well-coated. Cover and let it marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavorful results).

      Cook the Chicken: Preheat your grill or a large skillet over medium-high heat. Remove the chicken from the marinade and grill or sauté for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). Let the chicken rest for a few minutes before slicing into strips.

        Warm the Tortillas: In a dry skillet, warm the corn tortillas over low heat for about 30 seconds on each side, or until they are pliable and slightly toasted.

          Assemble the Tacos: Place a few strips of grilled chipotle chicken in the center of each warm tortilla. Top with shredded red cabbage, avocado slices, and a sprinkle of fresh cilantro.

            Add Finishing Touches: Squeeze fresh lime juice over the assembled tacos, and optionally sprinkle with crumbled feta cheese for a creamy touch.
