Ingredients
  

4 boneless, skinless chicken breasts

1 cup fresh parsley, chopped

4 cloves garlic, minced

1/2 cup extra virgin olive oil

1/4 cup red wine vinegar (or apple cider vinegar)

1 teaspoon red pepper flakes

1 teaspoon dried oregano

Salt and pepper to taste

Juice of 1 lime

1 bell pepper, sliced (for grilling)

1 onion, sliced (for grilling)

Instructions
 

Make the Chimichurri Sauce: In a medium bowl, combine the chopped parsley, minced garlic, olive oil, red wine vinegar (or apple cider vinegar), red pepper flakes, dried oregano, lime juice, salt, and pepper. Mix well and set aside to let the flavors meld for about 15 minutes.

    Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides. You can either marinate the chicken in half of the chimichurri sauce for at least 30 minutes or just brush it on before grilling. If marinating, cover and refrigerate.

      Grill the Vegetables: Preheat the grill to medium-high heat. Toss the bell pepper and onion slices in a little olive oil and season with salt and pepper. Grill the vegetables for about 5-7 minutes until they are tender and have grill marks. Remove from the grill and set aside.

        Grill the Chicken: Place the marinated or brushed chicken breasts on the hot grill. Cook for 6-7 minutes on each side or until the chicken is thoroughly cooked and no longer pink in the center.

          Serve: Arrange the grilled chicken on a serving platter and top generously with the chimichurri sauce. Add the grilled vegetables on the side for a colorful presentation.

            Garnish: If desired, sprinkle some extra chopped parsley on top for color.
