300g spaghetti or linguine

400g large prawns, peeled and deveined

4 cloves garlic, minced

1-2 red chillies, finely chopped (adjust to taste)

4 tablespoons olive oil

1 teaspoon red pepper flakes (optional for extra heat)

1 lemon, zested and juiced

1/2 cup cherry tomatoes, halved

1/4 cup fresh parsley, chopped

Salt and pepper to taste

Grated Parmesan cheese (for serving)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest.

    Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped red chillies. Sauté for about 1-2 minutes until fragrant, but do not let the garlic burn.

      Cook the Prawns: Increase the heat to high, add the prawns, and sauté for about 3-4 minutes, or until they turn pink and opaque. Season with salt, pepper, and red pepper flakes (if using).

        Add the Tomatoes: Stir in the cherry tomatoes and cook for another 2-3 minutes until they start to soften.

          Combine Pasta and Sauce: Add the drained pasta to the skillet along with the lemon zest and juice. Toss everything together, adding reserved pasta water a little at a time if needed to loosen the sauce.

            Finish and Serve: Remove from heat, stir in the chopped parsley, and adjust seasoning if necessary. Serve immediately, topped with grated Parmesan cheese.
