2 cups sharp cheddar cheese, shredded

1 cup cream cheese, softened

1 can (15 oz) diced tomatoes with green chilies, drained

1/2 cup cooked and crumbled chorizo (optional)

1/2 cup milk (or more for desired consistency)

1/4 cup diced red onion

1 jalapeño, finely chopped (seeds removed for less heat)

1 teaspoon garlic powder

1/2 teaspoon ground cumin

Salt and pepper to taste

Fresh cilantro, for garnish (optional)

Tortilla chips, for serving

Instructions
 

In a medium-sized saucepan, combine soft cream cheese and milk over medium heat. Stir continuously until smooth and creamy.

    Gradually add the shredded cheddar cheese to the cream cheese mixture, stirring until fully melted and incorporated.

      Fold in the drained diced tomatoes with green chilies, cooked chorizo (if using), diced red onion, jalapeño, garlic powder, ground cumin, salt, and pepper.

        Continue cooking the dip for an additional 5-10 minutes, stirring frequently until heated through and combined well. If the mixture is too thick, add more milk to reach your desired consistency.

          Remove from heat, transfer to a serving bowl, and garnish with fresh cilantro if desired.

            Serve warm with tortilla chips for dipping.
