8-10 dried arbol chiles

2 medium tomatoes, roasted

1 small onion, chopped

2 cloves garlic, minced

1 tablespoon lime juice

1 teaspoon salt

1/2 teaspoon cumin

1/4 cup fresh cilantro, chopped

1/2 cup water (more if needed)

Prepare the Chiles: Begin by removing the stems and seeds from the dried arbol chiles. This will help reduce the heat and bitterness while still providing flavor.

    Toast the Chiles: Heat a skillet over medium heat and lightly toast the chiles for about 1-2 minutes until they become fragrant. Be careful not to burn them.

      Roast the Tomatoes: In the same skillet, roast the tomatoes until the skins blister and start to char, approximately 5-7 minutes. Remove from heat and let cool.

        Blend the Ingredients: In a blender or food processor, combine the toasted arbol chiles, roasted tomatoes, chopped onion, minced garlic, lime juice, salt, cumin, and half of the cilantro. Add the 1/2 cup of water to start, adjusting to your desired consistency.

          Process Until Smooth: Blend all the ingredients until you achieve a smooth salsa. If the salsa is too thick, add more water until it reaches your preferred consistency.

            Taste and Adjust: Taste the salsa and adjust the seasoning, adding more salt or lime juice if desired. If you like more heat, add more toasted chiles at this stage.

              Finish and Serve: Stir in the remaining cilantro for a fresh kick. Transfer the salsa to a serving bowl.

                Chill (Optional): Let the salsa sit for at least 30 minutes in the refrigerator to allow flavors to meld together. This salsa can be served immediately but is best after chilling.
