Ingredients

1 can (15 oz) chili with beans (your choice of mild or spicy)

1 cup cream cheese, softened

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1/2 cup sour cream

1/2 cup diced tomatoes (fresh or canned, drained)

1/4 cup sliced jalapeños (fresh or pickled, adjust for spice level)

1 tsp garlic powder

1 tsp onion powder

1/2 tsp smoked paprika

Tortilla chips, for serving

Fresh cilantro, chopped (optional, for garnish)

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C).

Mix Base Ingredients: In a mixing bowl, combine the softened cream cheese and sour cream. Beat until smooth and creamy.

Add Chili and Spices: Stir in the can of chili, garlic powder, onion powder, and smoked paprika until thoroughly combined.

Cheese it Up: Fold in the shredded cheddar and Monterey Jack cheeses, reserving a handful of each type for topping.

Add Veggies: Gently mix in the diced tomatoes and jalapeños, ensuring even distribution.

Transfer to Baking Dish: Pour the mixture into a greased 9x9-inch baking dish and spread evenly.

Top with Cheese: Sprinkle the reserved shredded cheeses on top for that gooey, melty finish.

Bake: Place the baking dish in the preheated oven and bake for about 25-30 minutes, or until the cheese is melted and bubbly.

Garnish and Serve: Remove from the oven, let it cool for a few minutes, and garnish with chopped cilantro if desired. Serve warm with tortilla chips for dipping.
