Ingredients

1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon ground cumin

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon cayenne pepper (adjust to taste)

1/2 teaspoon sea salt

1/4 teaspoon black pepper

1 tablespoon nutritional yeast (optional for a cheesy flavor)

Fresh parsley, chopped (for garnish, optional)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Prepare Chickpeas: Spread the drained and rinsed chickpeas on a clean kitchen towel and gently pat them dry to remove excess moisture. This step helps them get crispy.

Season Chickpeas: In a mixing bowl, combine the dried chickpeas with olive oil, smoked paprika, cumin, garlic powder, onion powder, cayenne pepper, sea salt, and black pepper. If using, add nutritional yeast for extra flavor. Toss until the chickpeas are evenly coated.

Arrange on Baking Sheet: Spread the seasoned chickpeas in a single layer on the prepared baking sheet, ensuring they are not overcrowded.

Roast: Place the tray in the preheated oven and roast for 20-25 minutes, stirring halfway through to ensure even cooking. Keep an eye on them to avoid burning; they're done when they're golden and crunchy.

Cool and Serve: Remove the baking sheet from the oven and let the chickpeas cool for 5 minutes. Garnish with fresh parsley if desired. Enjoy them warm or at room temperature as a snack or topping for salads!
