2 cups cooked chicken, shredded

1 cup cream cheese, softened

1 cup shredded cheddar cheese

1 cup salsa (mild or hot, according to preference)

1 tsp garlic powder

1 tsp onion powder

½ tsp cumin

½ tsp smoked paprika

Salt and pepper to taste

10 small corn or flour tortillas

Oil for frying (vegetable or canola)

Fresh cilantro, for garnish (optional)

Lime wedges, for serving

Prepare the Filling: In a large mixing bowl, combine the shredded chicken, cream cheese, cheddar cheese, salsa, garlic powder, onion powder, cumin, smoked paprika, salt, and pepper. Mix well until all ingredients are evenly combined and the mixture is creamy.

    Warm the Tortillas: To avoid breaking, gently warm the tortillas in a skillet over medium heat for about 30 seconds per side. This will make them more pliable for rolling.

      Roll the Taquitos: Take a tortilla and place about 2 tablespoons of the chicken mixture near one edge. Roll the tortilla tightly around the filling, tucking in the sides as you roll. Repeat this for all tortillas and filling.

        Heat the Oil: In a large skillet or deep frying pan, pour enough oil to cover the bottom (about 1/4 inch deep) and heat over medium-high heat until it reaches 350°F (175°C).

          Fry the Taquitos: Fry the taquitos in batches, placing them seam-side down in the hot oil. Cook for about 3-4 minutes on each side or until golden brown and crispy. Make sure not to overcrowd the pan.
