500g chicken breast, sliced into thin strips

250g mushrooms, sliced

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup chicken broth

1 cup sour cream

2 tablespoons all-purpose flour

2 tablespoons olive oil

1 tablespoon Dijon mustard

Salt and pepper to taste

Fresh parsley, chopped for garnish

Egg noodles or rice, for serving

Instructions
 

Heat the olive oil in a large skillet over medium heat. Add the chopped onions and sauté until translucent, about 3-4 minutes.

    Add the minced garlic and sliced mushrooms to the skillet, cooking until the mushrooms are softened and golden, about 5 minutes.

      Push the mushroom mixture to the side of the pan and add the chicken strips. Season with salt and pepper, and cook until browned and cooked through, about 6-7 minutes.

        In a small bowl, whisk together the flour and chicken broth until smooth. Slowly pour this mixture into the skillet, stirring gently to combine.

          Add the Dijon mustard and bring the sauce to a gentle simmer. Let it cook for about 3-4 minutes until slightly thickened.

            Reduce the heat to low and stir in the sour cream until fully incorporated. Allow it to heat through without boiling, about 2 minutes.

              Taste and adjust seasoning with more salt and pepper if needed.

                Serve the stroganoff over freshly cooked egg noodles or rice, and garnish with chopped parsley.
