2 boneless, skinless chicken breasts, thinly sliced

Salt and pepper, to taste

1/2 cup all-purpose flour

1/4 cup olive oil

2 tablespoons unsalted butter

1/4 cup fresh lemon juice (about 2 lemons)

1/2 cup chicken broth

1/4 cup capers, rinsed and drained

1 tablespoon fresh parsley, chopped, for garnish

Instructions
 

Prepare the Chicken: Season the sliced chicken breasts with salt and pepper. Dredge each piece in the flour, shaking off any excess.

    Sauté the Chicken: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the chicken slices in a single layer (you may need to do this in batches) and cook for about 3-4 minutes on each side, or until golden brown and cooked through. Remove the cooked chicken from the pan and set aside on a plate.

      Make the Piccata Sauce: In the same skillet, lower the heat to medium. Add the butter and let it melt, scraping any browned bits from the bottom of the pan. Next, add the lemon juice and chicken broth, stirring to combine.

        Add the Capers: Gently toss in the capers and let the sauce simmer for about 2-3 minutes, allowing the flavors to meld together.

          Combine and Serve: Return the cooked chicken to the skillet, spooning some of the sauce over the top. Cook for an additional 1-2 minutes to warm through.
