Ingredients
  

1 lb ground chicken

1/2 cup Italian breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup fresh parsley, chopped

1 clove garlic, minced

1 large egg

Salt and pepper to taste

1/4 cup lemon juice (freshly squeezed)

1 cup chicken broth

3 tbsp capers, rinsed and drained

2 tbsp olive oil

Lemon slices for garnish

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    In a large bowl, combine ground chicken, Italian breadcrumbs, Parmesan cheese, fresh parsley, minced garlic, and egg. Season with salt and pepper. Mix until just combined, being careful not to overwork the mixture.

      Form the mixture into meatballs, about 1 inch in diameter, and place them on the prepared baking sheet.

        Drizzle olive oil over the meatballs and bake in the preheated oven for 20-25 minutes or until beautifully golden and fully cooked through.

          While the meatballs are baking, prepare the sauce. In a large skillet over medium heat, add the lemon juice and chicken broth. Bring to a gentle simmer.

            Once the meatballs are cooked, carefully transfer them to the skillet with the sauce. Add capers and gently stir to coat the meatballs in the lemony broth. Let them simmer together for 5-7 minutes so the flavors meld.

              Serve the meatballs hot, garnished with lemon slices and additional fresh parsley, if desired.
