2 tablespoons olive oil

1 medium onion, chopped

3 cloves garlic, minced

2 medium carrots, sliced

2 celery stalks, sliced

1 teaspoon dried thyme

1 teaspoon dried oregano

6 cups low-sodium chicken broth

2 cups cooked chicken, shredded (rotisserie chicken works great)

1 cup egg noodles

Salt and pepper to taste

Fresh parsley, chopped, for garnish

Juice of half a lemon (for brightness)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent, about 4-5 minutes.

    Stir in the minced garlic, sliced carrots, and celery. Cook for an additional 3-4 minutes until the vegetables begin to soften.

      Sprinkle in the dried thyme and oregano. Stir well to coat the vegetables with the herbs.

        Pour in the chicken broth and bring the mixture to a gentle boil.

          Once boiling, add the shredded chicken and egg noodles. Reduce the heat and let it simmer for about 8-10 minutes, just until the noodles are cooked through.

            Season the soup with salt and pepper to taste. Add the lemon juice to brighten the flavors and stir to combine.

              Remove from heat and ladle the soup into serving bowls. Garnish with freshly chopped parsley before serving.
