For the Chicken Meatballs:

1 lb ground chicken

1/4 cup breadcrumbs

1/4 cup grated Parmesan cheese

1 large egg

2 cloves garlic, minced

2 tbsp fresh parsley, chopped

1 tsp salt

1/2 tsp black pepper

1/2 tsp dried oregano

1/4 tsp red pepper flakes (optional)

Zest of 1 lemon

For the Piccata Sauce:

3 tbsp olive oil

2 tbsp capers, rinsed and drained

1/2 cup chicken broth

Juice of 1 lemon

1 tsp Dijon mustard

1/4 cup fresh parsley, chopped

Salt and pepper to taste

Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare Meatball Mixture: In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, egg, minced garlic, fresh parsley, salt, black pepper, oregano, red pepper flakes, and lemon zest. Mix until all ingredients are well incorporated.

      Shape Meatballs: Use your hands to form the mixture into 1-inch meatballs and place them evenly spaced on the prepared baking sheet.

        Bake Meatballs: Bake the meatballs in the preheated oven for 20-25 minutes, or until cooked through and golden brown.
