Ingredients

2 boneless, skinless chicken breasts

4 slices of ham (preferably Black Forest or prosciutto)

4 slices of Swiss cheese

1 medium onion, diced

2 cloves garlic, minced

4 cups chicken broth

1 cup heavy cream

2 tablespoons Dijon mustard

1 tablespoon fresh thyme, chopped (or 1 teaspoon dried thyme)

1 cup frozen peas

Salt and pepper, to taste

2 tablespoons olive oil

2 tablespoons flour (optional, for thickening)

Fresh parsley, chopped, for garnishing

Instructions

In a large pot, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.

Add the minced garlic and stir for about 1 minute until fragrant.

Special step: While the onion and garlic are cooking, cut the chicken breasts into bite-sized cubes. Season with salt and pepper.

Increase heat to medium-high and add the chicken cubes to the pot. Cook until the chicken is browned and cooked through, about 5-7 minutes.

Stir in the flour (if using), ensuring everything is well-coated, and cook for another 1-2 minutes.

Pour in the chicken broth and add the Dijon mustard and thyme. Bring to a simmer, then reduce heat to low.

Tear the ham slices and Swiss cheese into small pieces and stir them into the soup. Allow the cheese to melt, stirring occasionally.

Once the cheese has melted, pour in the heavy cream and add the frozen peas. Stir well and allow the soup to heat through for another 5 minutes.

Adjust seasoning with salt and pepper as needed.

Serve hot, garnished with fresh parsley.
