For the Chicken Marinade:

1 lb (450g) boneless, skinless chicken breast, sliced thinly

1 tablespoon soy sauce

1 tablespoon cornstarch

1 teaspoon sesame oil

For the Chow Mein:

8 oz (225g) chow mein noodles, cooked according to package instructions

2 tablespoons vegetable oil, divided

2 cloves garlic, minced

1 small onion, sliced

1 cup bell peppers, sliced (mix of red and green)

1 cup bean sprouts

1 cup shredded carrots

1 cup snow peas

3 green onions, chopped

For The Best Chow Mein Sauce:

3 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon hoisin sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 teaspoon sugar

1/4 cup chicken broth

Instructions
 

Marinate the Chicken: In a bowl, combine chicken, soy sauce, cornstarch, and sesame oil. Mix well and let marinate for at least 20 minutes.

    Prepare The Chow Mein Sauce: In a small bowl, whisk together all the sauce ingredients: soy sauce, oyster sauce, hoisin sauce, rice vinegar, sesame oil, sugar, and chicken broth. Set aside.

      Stir-Fry the Chicken: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the marinated chicken and stir-fry until cooked through, about 4-5 minutes. Remove the chicken from the pan and set aside.

        Stir-Fry the Vegetables: In the same skillet, add the remaining tablespoon of oil. Then add the minced garlic and sliced onion, stir-frying for 1-2 minutes until fragrant. Add bell peppers, bean sprouts, shredded carrots, and snow peas. Stir-fry for another 3-4 minutes until the vegetables are tender but still crisp.

          Combine Noodles and Chicken: Add the cooked chow mein noodles and the cooked chicken back into the skillet with the vegetables. Pour the chow mein sauce over the mixture and toss everything together, cooking for an additional 2-3 minutes to heat through.

            Final Touch: Sprinkle chopped green onions over the chow mein, giving a final toss.

              Serve Hot: Transfer the chicken chow mein to a serving platter and serve immediately.
