2 lbs chicken thighs, boneless and skinless

1 cup buttermilk

2 tablespoons chipotle in adobo sauce, minced

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 tablespoon lime juice

¾ teaspoon salt

½ teaspoon black pepper

1 cup all-purpose flour

½ cup breadcrumbs (preferably Panko)

½ cup vegetable oil (for frying)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Marinate the Chicken: In a large mixing bowl, combine the buttermilk, minced chipotle, smoked paprika, garlic powder, onion powder, lime juice, salt, and black pepper. Add the chicken thighs to the bowl, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or preferably overnight.

    Prepare the Coating: In a shallow dish, combine the all-purpose flour and breadcrumbs. Mix well to combine.

      Coat the Chicken: Remove the marinated chicken thighs from the refrigerator. Dredge each piece in the flour and breadcrumb mixture, pressing lightly to adhere the coating.

        Heat the Oil: In a large skillet, heat the vegetable oil over medium-high heat until it shimmers. To test if the oil is hot enough, drop a small piece of the breadcrumb mixture into the oil; it should sizzle immediately.

          Fry the Chicken: Carefully add the coated chicken thighs to the skillet. Fry the chicken for about 5-7 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F). Work in batches if necessary, being careful not to overcrowd the pan.
