2 cups cooked wild rice

1 pound boneless, skinless chicken breasts, diced

1 cup diced onion

1 cup diced celery

1 cup diced carrots

3 cups low-sodium chicken broth

1 cup milk

1 cup frozen peas

1 teaspoon dried thyme

1 teaspoon garlic powder

2 tablespoons olive oil

Salt and pepper to taste

1 cup shredded cheddar cheese

½ cup breadcrumbs

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large skillet, heat the olive oil over medium heat. Add the diced onion, celery, and carrots, and sauté for about 5-7 minutes, until softened.

      Add the diced chicken to the skillet and cook until the chicken is no longer pink, about 5-7 minutes. Season with salt, pepper, thyme, and garlic powder.

        In a large mixing bowl, combine the cooked wild rice, sautéed chicken and vegetables, chicken broth, milk, and frozen peas. Stir until everything is well mixed.

          Transfer the mixture into a greased 9x13-inch casserole dish, spreading it evenly.

            Sprinkle the shredded cheddar cheese and breadcrumbs evenly on top.

              Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.

                Remove the foil and bake for an additional 15-20 minutes, or until the top is golden and bubbly.

                  Once done, allow it to cool for about 5 minutes before serving.
