4 boneless, skinless chicken thighs

4 medium-sized potatoes, sliced thinly

1 large onion, sliced

3 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream

1 teaspoon dried thyme

1 teaspoon paprika

1 teaspoon salt

½ teaspoon black pepper

1 cup shredded cheese (cheddar or mozzarella)

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Oven and Dish: Preheat your oven to 375°F (190°C) and grease a large baking dish with a bit of olive oil.

    Cook the Potatoes: In a large mixing bowl, toss the thinly sliced potatoes with olive oil, salt, pepper, dried thyme, and paprika until evenly coated.

      Layer the Ingredients: Spread half of the seasoned potatoes on the bottom of the baking dish. Top with half of the sliced onion and half of the minced garlic.

        Add the Chicken: Place the chicken thighs on top of the first layer of potatoes. Season the chicken with a little salt, pepper, and any remaining thyme.

          Add Remaining Layers: Layer the remaining onions and garlic over the chicken, followed by the rest of the potatoes.

            Combine Cream and Broth: In a separate bowl, whisk together the chicken broth and heavy cream. Pour this mixture evenly over the layered ingredients in the baking dish.

              Cheese It Up: Sprinkle the shredded cheese on top of the bake, covering all the layers.

                Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes, then remove the foil and bake for an additional 20-25 minutes until the chicken is fully cooked and the potatoes are tender and golden on top.
