1 cup cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup cherry pie filling (store-bought or homemade)

8 egg roll wrappers

1/4 cup all-purpose flour (for sealing)

1 egg, beaten (for egg wash)

Oil for frying

Whipped cream, for serving (optional)

Fresh cherries, for garnish (optional)

Instructions
 

In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Beat until smooth and well combined.

    Lay an egg roll wrapper on a clean, dry surface with one corner facing you, creating a diamond shape.

      Spoon about 2 tablespoons of the cream cheese mixture onto the center of the wrapper. Top it with 1-2 tablespoons of cherry pie filling.

        Fold the bottom corner of the wrapper over the filling, then fold in the sides, and roll tightly while tucking in the corners to seal. Use a dab of the beaten egg to help seal the edges.

          Repeat this process with the remaining wrappers and filling until they are all filled.

            Heat at least 2 inches of oil in a deep skillet over medium heat until it reaches 350°F (175°C).

              Carefully place a few egg rolls in the hot oil (avoid overcrowding) and fry for 2-3 minutes on each side or until golden brown and crispy.

                Remove the egg rolls from the oil and place them on a paper towel-lined plate to drain excess oil.

                  Allow them to cool slightly before serving. Optionally, dust with powdered sugar for extra sweetness.

                    Serve warm with a dollop of whipped cream and garnish with fresh cherries, if desired.
